Veggie Meal Plan for Week of September 22nd, 2014 and a Review!

I haven't done a meal plan in a few weeks.

Getting back into the swing of the school year + kids being sick + activities and whatnot have had me a little busy.

Meals have been pretty thrown together lately.

I am attempting to get back into our usual schedule.

I hope you like the recipes that I chose for this coming week :)


I adore spring rolls!  They are light and delicious and I feel like I can eat 20 of them (but I probably shouldn't...)  I also shy away from eating a ton of tofu (it depends on the kind of tofu for me and my husband really does not like tofu...), but crispy tofu sounds pretty yummy right now!

One saving grace from this past week was an offer from a local business to make us dinner one night.  So much food came from this one meal that the kids all ate, the husband and I had two servings each and then we adults each had 2 days of leftover lunches!

It was all SUPER yummy!  Even better?  They ingredients are local, seasonal and light.  No fried greasiness or loaded preservatives.  It's better than when I cook fresh!

Chefanti meals are freshly prepared and available for pick-up or delivery every Monday through Friday. Meals must be ordered at least 24 hours in advance, and may be ordered as far as 2 weeks in advance. Our menu changes every 2 weeks, so be sure to check back frequently for interesting and healthy choices the whole family will enjoy!
Meals are served family-style and packaged in oven, microwave, and freezer safe containers for you to easily heat up or save for later. To place an order, check our online menu, then login to your account. Select the item(s) you want to order and the day you want the meal(s) delivered or available for pick-up at our West Chester location. Your pre-ordered meal will be available for pick up after 4pm on the day you choose, and deliveries will be made between 2-7pm on the day you have scheduled.
We Chose the BBQ Chicken, Mixed Veggie and Mashed Potatoes for the adults and Crispy Chicken with Broccoli and Mashed Potatoes for the kids.  It was a hit with all of us!  My husband and Mother in Law had lots to say about the quality and tastiness and the kids ate - that should say it all ;)

Back to School: Packing Lunches

School starts here on Tuesday and I am dreading packing lunches again.

I have a hard enough time making actual food for myself and dinner for everyone.

I wrote a post that is like my cheat sheet when I feel defeated.  Just a list of what my kids will eat and what I should have on hand each week.

Having it in writing always makes me feel less overwhelmed.  My list only includes one sandwich option for when my daughter is in the mood, so I strive for more creative choices.  There are also some make-ahead and breakfast in a pinch ideas!

Veggie Meal Plan 7/25/14

Going through Pinterest this last week I have noticed an increasing amount of fall/winter pins and I think that there may actually be people out there that are as done with summer as I am.  But to be fair, I am rarely into summer.  I like the beach for a couple of days and that is it.  I hate the heat and humidity and I spend the fall and winter reveling in the glory, almost mourning the fact that it will be spring and summer again.  And then it is and I feel like this… counting the days until cooler weather, boots, scarfs, fires in the fire place, pumpkins and cinnamon, snuggling under the blankets with hot chocolate.  I. Can’t. Wait.
My desire for the cooler months may have may have influenced my menu choices this week ;)

Veggie Menu Plan 6/2/14

Can you believe it's June?!  JUNE?  We are already half way through 2014.  Blows my mind, it really does. So many things have happened this year and yet it feels like it has flown past us.  I don't even remember what my New Years Resolutions were...

There's lots of things going on right now.  Things that I hope will become more than ideas and wishes and that I will be able to share them with you.  I feel like I am going to burst holding all of my secrets in!  I am blessed beyond measure and so many directions are calling us as a family.  It's truly unbelievable.  I know I am rambling and you're like "tell us already!" but I can't *sigh*

You might notice some meat or extra eggs making their way into my menus.  I am still pursuing a plant based diet, but I tend to skimp on the protein.  It is hard to go from believing that only eggs, dairy and meat provide protein adequately to finding all new sources.  I am still searching to replace the animal products, but I am also feeling the lack of protein in my diet.  But, my recipes will easily be vegetarian or vegan by removing the meat/eggs from them.  I have just been adding some fish or chicken here and there and trying to make it the healthiest versions I can find (organic, grass fed, wild, etc...)

I have been on a huge salad kick so bare with me...


These Paleo Cucumber Tuna Boats look adorable and encompass on of my favorite ways to eat tuna - on cucumbers or with lots of veggies.   These make it easy to eat on the go or outside on the deck, which is how my kids prefer to eat now that it is (relatively) warm out.

Chick Pea and Tomato Salad is so delicious and refreshing!  I will be adding cucumber and red peppers to this and maybe some Kalamata Olives if I have any.  The more veggies the better and I love the extra crunch and saltiness!

You could also add white beans instead of chick peas and add some Fetta for yummy Mediterranean salad.

You can bet that I will be eating all of these salads with or on some greens.  Like I said, I love extra  veggies that some crunch...and nutrition!  I also add crusty bread, pita, hummus or crackers on the side for dipping and for some extra heartiness.  Sometimes I make some all natural chicken tenders for the kiddos, but I am happy to say that my kids love salads and veggies so they will go to town on this stuff :)

I also wanted to tell you about a supplement that I am taking called Greens by It Works! Global.  It is an amazing company that sells revolutionary products.  My favorite being the Greens.


I also comes in Berry flavored.  Both the Orange and the Berry are great in water, juice, applesauce and smoothies.  It also doesn't mention that it includes a probiotic!

I take this every morning and sometimes (like right now with this awful summer cold) twice.  I love that I start the day "in the black" as far as my veggies.  I have already consumed my full 8 servings of fruits and vegetables before I've had breakfast and I then everything else I eat is icing on the cake!

Plus, my kids like it!  They don't drink it everyday, but if they aren't feeling well or we see a cold coming on, I give them a half serving in some juice and gives them a little extra defense.  It is such an awesome product!

The Ultimate VEGGIE Memorial Day Menu

My daughter is thrilled because this weekend is the unofficial start to Summer.  She wants it "hot and sweaty" she says.  This is not something we share.  The spring has been pretty mild so far and (besides the seasonal allergies) it's been pleasant.  However, I am already looking forward to late Fall.
