Meal Planning: {Vegetarian} August 19, 2013

Happy Monday everyone! I have been scouring Pinterest for some awesome vegetarian and/or vegan and or gluten free recipes and it never disappoints!

1. Easy Vegetarian Chili Recipe
2. Connie's Zucchini "Crab" Cakes
3. Cannellini  Bean Vegetarian "Meatballs" with Tomato Sauce

All  three look delicious!

I am really excited to tell you about dessert, though ;)

I showed everyone on Instagram Saturday night the AMAZING cookies that I made.  They got a huge response - which I love <3 Thank you guys!!!

Follow the pic to my local blog for the story and recipe behind Banana Chocolate Chip Cookies (Which I promised could easily be made Vegan and/or Gluten Free!)

  • 2 1/4 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 small banana
  • 3 oz applesauce
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips
 **  cook at 375 for about 12 mins  

You can easily switch out the flour with gluten free or coconut flour and the chocolate chips with gluten free and vegan varieties.
