Veggie Meal Plan 4/28/14


We had a crazy weekend packed FULL of activities!

Birthday parties, work, school, more work...

I attended the West Chester International Film Festival and reported on it on Local Girl.  It was a really great experience!

I also found some camp ideas for the kiddos this summer.  I want to get them involved in something educational and physical to keep them engaged.  They get so bored when school isn't in session and the love to get out with other kids and play.  I have been looking into half day camps because I don't want it to feel like a chore and I don't need child care, so it isn't necessary.

We were also introduced to a new science program in our area, called Think Like a Scientist, that is AMAZING!  I can't wait to chat with the ladies there some more :)





The menu this week is light.  The weather is getting nicer and I feel less compelled to focus on comfort foods, which is a good thing!

Crock Pot/Slow Cooker Lo Mein Noodles  This is a chicken lo mein recipe, but I will be leaving the chicken out and adding extra veggies :)

Sweet Potato, Black Bean and Avocado Breakfast Burritos  I want to make a bunch of these and try freezing them for breakfast/lunch/dinner.  I think they will work for any meal.  Leave out the cheese and choose your wrap and this could be vegan and/or gluten free :)

BLT Panzanella Salad This looks delicious!  I will be leaving the bacon out - I think there is plenty of flavor in this so it will not be missed.  You could also add Bacos if you feel like the Bacon is necessary, but you don't want the meat.
