Happy Monday Everyone! I am sharing some vegetarian recipes with you today. Summer always reminds me of fresh foods and sunshine. I tend to eat healthier in the summer time because the heat makes lighter meals more appealing and many of my favorite fruits and veggies are in season.
I was a vegetarian for 7 years in me teens and 20's. I liked being a vegetarian but it became difficult to continue once I moved in with my husband and, later, his family. One vegetarian in a house with 6 carnivores get complicated sometimes and I found I was eating things that weren't making up a balanced diet just to eat around everyone else. I went back to fish and chicken, which I missed terrible, and then red meat after a few years. I still don't have to have meat in my meals, but it has become the focus of our meals again.
I was just going through my freezer and realized that I had so much meat that never got used and has been in there too long. That really frustrates me.
You know how it goes-you plan to make something and stuff happens and you change your plans. If this happens enough times, food goes bad or you forget about it. Not exactly cost effective. I have decided that I will keep a stockpile of frozen veggies, rice, beans, etc... so that I can make a meal I plan for, but still have flexibility without risking expiration.
I like the versatility of beans, lentils and soy substitutes so they are going to be in the mix a lot more.
