Happy Monday everyone! My menu this week has some variety, but it is all versatile and easy to get on the table fast! This is the last week of school, crossed with the first week of camp for my kiddos and the week appears to be shaping up to be quite hectic. I will be thrilled if I can get these three dishes together ;)
Open Faced "Creamy" Jasmine Rice Vegan Tacos - These look amazing! I will probably throw in some black beans, salsa and avocado because I love them, but this recipe is so versatile it can be used as a template to build any number of delicious taco variations.
These Paleo Zucchini Fritters look delicious! I can't wait to try them ...mmmm.... I would eat these by themselves or as a side dish. Haven't decided what to do yet. I will likely end up serving them with leftovers. While I could eat them and be satisfied, the rest of the family might be upset...
This Chickpea Curry is a great vegetarian dish and it only takes 20 minutes! Quick and easy is my thing ;)
I think that you could easily throw in fish or your choice of meat for some extra bulk or protein and it would be really yummy.
